Thank you. :)

Is there a way to change the automatic updates to the notify me option?

Open Windows Control Panel and type "Flash" in the search box and click on Flash Player when it is displayed in the search results.  That will open the "Flash Player Settings Manager".  Click on the "Update" tab and make any changes you wish to make.  Although, if you are going to keep Flash Player active (I have it disabled), I recommend maintaining automatic updates.  Your PC, your choice.  :)

You mean the "normal" Control Panel? I can't see the settings manager.

Yes, the "normal" Control Panel.  Did you type "flash" in the search box located in the upper right corner of the Control Panel?

I found it and changed the option to Notify me.

Thank you.  :)

A few months ago, I uninstalled it from Firefox, and turned it off in Edge.

The upside - one less update to bother with.
The downside - so far, I haven't experienced any downside.

I'm still on Windows 7. Since I know it is coming to an end in 2020, I removed it from all computers (four) in September 2019. Like Pete, I haven't noticed any issues and it saves me time every month manually updating flash for the browsers.
