What do you fill the Vareniki with?
Our Church has a periogi making event in November to sell mashed potato and cheese filled perogi at the Christmas bazaar.
My favorite Vareniki (or varenyky) is potato/cheese, with sauteed onions and, of course, sour cream. My mother-in-law used to get fresh "farmer's cheese" (rather like a dry cottage cheese) from a local farm. If that wasn't available, she used cream cheese. I've never had vareniki as good as hers -- or course she learned from her mother in Ukraine and was amazing to watch making them. She also made them with a sauerkraut filling and for Christmas there were a few with a poppy seed filling to float one in the borscht. They can also be made with fruit filling although she never did that. Traditionally, the 12 courses served Christmas Eve are meatless, although we didn't strictly stick to that. (The recipe for her walnut torte is a family secret. There is no flour in it but it takes a dozen eggs!)

My favorite is still Nat King Cole's rendition of The Christmas song but almost anything by Mannheim Steamroller is good.
Old technology...I finally get to hear my 5 Mannheim Steamroller CDs. The 5 disk CD changer was set up and connected to a radio/receiver in the living room by RCA plugs and a 2.5mm audio plug. The volume on the receiver died. It took me awhile to figure out how to move the 5 disk changer to the basement and hook it up to an old stereo system from the 1980's. The huge speakers on this system are not plugged in. They use thin wire and clamps to connect to the receiver unit. It isn't practical to move that unit to the living room.
I swear I tested the living room radio/receiver over the course of several months in different outlets in the house. I never heard a sound. I was going to e-cycle it at Best Buy. I plugged it in one last time and there was sound!!! Just like computers, there must be gremlins in the system. I'm not ready to move the CD changer back to the living room. I figure if I get it all set up again, the sound will quit - again.
