Corrine are these safe to download and install?

Yes, absolutely!  None of the builds, Beta (updated ~6 weeks), DEV (updated ~weekly) or Canary (updated daily) replace Microsoft Edge on your device.  Instead, the version you are testing is downloaded.  The icons of the versions are easily identified.  For example, the icon for Edge DEV has "DEV" imprinted on the icon.

so how does one update edge?

It is easy with the Beta:

1.  In your Microsoft Edge browser, click on the 3 dots (...) on the very right hand side of the window
2.  Click on Settings
3.  Click on About Microsoft Edge and it will automatically check for updates
